Nicole Salgado of Mexican and European ancestry grew up in Central New York. When she came to live in the Bay Area, she was exposed to authentic Mexican cooking via friends and family members. She moved to her husband’s home state of Querétaro, Central Mexico in 2006, where she became part of an extended Queretaro family and introduced to traditional methods for cultivating and utilizing maize.
